– 400 grams spaghetti
– 1 tablespoon olive oil
– 200g sliced flat pancetta (see note), cut into 1cm-wide strips
– 2 garlic cloves, finely chopped
– 3 eggs, plus 1 extra yolk
– 100ml thickened cream
– 2/3 cup (50g) freshly grated parmesan, plus extra to serve
– 2 tablespoons chopped flat-leaf parsley leaves
Cook the pasta in a large pan of boiling salted water according to the packet instructions (usually 10 minutes are fine). Meanwhile, heat oil in a frypan over medium heat and cook the pancetta, stirring for 2-3 minutes until crispy. Add garlic for 30 seconds, then set pan aside. Place the eggs, the yolk the cream and the parmesan in a bowl. Season the mixture and then mix gently with a fork. Drain the pasta, then return to pan. Quickly add egg and pancetta mixtures and parsley. Toss to combine. The heat from the pasta will cook the egg slightly and form a creamy sauce. Serve with extra parmesan.

For those sea food lovers this combination is perfect. You can cook it on special occasions for your significant others or your family. It is made this way:
– 1/4 cup (60ml) olive oil, plus extra to toss

– 200ml dry white wine
– 500g spaghetti
– 300g mussels, scrubbed, debearded
– 800g good-quality marinara mix
– 200g peeled green prawns
– Torn flat-leaf parsley leaves, to serve

Add the tomatoes and wine and bring to a simmer, then reduce the heat to low and cook for another 20 minutes until slightly reduced. Meanwhile, cook the pasta in a boiling salted water for 10-15 or the way it is instructed on the bag. Drain, then return to the pan and toss in a little olive oil. Add the mussels to the pan of sauce, cover and cook for 1 minute, shaking the pan occasionally. Add the remaining seafood and cook for a further 2-3 minutes until the marinara mix and prawns are cooked through and the mussels have opened time. Season to taste with sea and black pepper.
