After getting the rack of ribs, flip them over and here you will find a shiny and thin layer of membrane which covers the bones. There are several people and restaurants who generally try to avoid this part because after preparing it becomes chewy. So, if you also want to remove it then just take a butter knife and put it between the membrane and bone and then by taking the help of the paper towel pull the entire membrane from the rib bones. Trim the 1 bone from the large end of the ribs and 2 bones from the other end so that you will be able to make a consistent sized rack for smoking. Before the preparation of seasoning remove all the additional skins.

If you are having a charcoal grill then simply build your fire on one side of the grill and cook on the other side. You can also place a pan along with apple juice or water under your food which will also help you with this effect.

In most of the barbecue recipes, 250 degree is the perfect temperature, if you are smoking at the house. On this temperature the baby back ribs will prepared in approximately 4 hours while if you are preparing a St. Louis cut rib then it will take near about 5 hours.

While preparing the ribs, the wood which you are going to use must be used with moderation, just like the salt. Try to avoid too much of smoke as it can overpower the product. The wood of cherry or apple is considered as the best fruit wood, if you are preparing the rib in your backyard, this is because with the help of this wood you need not to run much at a risk of overpowering it. When the cooker with reach the position of temperature add four chunks of wood along with the charcoal for perfect smoke.

It is good to prepare the ribs at slow and low. If the rib is taking more than 2 hours to cook then it is good to wrap it in the foil. As we know that baby back ribs generally took 4 hours to prepare while all the rest ribs will took 5 hours so it is good to wrap both the ribs after two and half hours. If you will follow this in a perfect way then you will be able to view a very tender color of the ribs. Before wrapping up the meat lay them down on the top of the sheet of aluminum foil, the foil must be of heavy duty, after that add flavor enhancers if you want, and then wrap the ribs loosely so that the steam can easily escape from it.

If you want to add sauce then tries to add it in the last few minutes of cooking and then set it for the meat. Try to avoid adding too much of sauce as this can destroy the taste of the ribs. To sauce the ribs, simply take it out from the smoker and carefully open the foil and add the sauce. After putting up the sauce again wrap up the ribs and cook it for 15 minutes in the smoker so that the sauce can get tighten up. After the completion of 15 minutes you can take the ribs and then leave it for 5 minutes, and after that apply the second coating of sauce before serving your perfect rack of ribs.
