1 Butternut Squash Soup
This tasty, thick and rich soup is a star of a dish that can give a kick start to your Thanksgiving meal. Full of a variety of flavors, Butternut Squash Soup can tickle your taste buds like a pro.
- 2 tbsp butter
- 1 stalk chopped celery
- 1 onion, chopped
- 1 carrot, chopped
- 2 potatoes, cubed
- 1 can chicken stock
- 1 butternut squash, peeled, seeded and cubed
- Salt to taste
Melt butter in a pot. Add onion, carrot, celery, squash and potatoes and cook until light brown in color. Add chicken stock in amount so as to cover the vegetables and then bring to boil. Then reduce heat, cover the pot and simmer for at least 40 minutes or until the vegetables turn tender. When cooked, let it cool in room temperature. Then blend the soup in a blender till it turns smooth. Transfer the soup in container and add the remaining stock for the desired consistency. Season it with salt and pepper and you are good to go!
